Vegetable soups are a strong ally in the fight against the accumulated fatigue. Here are some delicious and healthy recipes.
Soup with different vegetables
- 1 potato;
- 3 carrots;
- 1 celery stick;
- 1 red onion;
- 1 minced garlic;
- 1 pinch of salt;
- 1/2 teaspoon of pepper;
- A little of red pepper;
- 1 bay leaf;
- 400 grams pasteurized tomatoes;
- 400 grams of cooked peas;
- 1 hand of spinach;
Place all the ingredients (except the spinach) in a bowl on fire and let them boil. Add the spinach when the boiling is almost over and let it to boil with the other ingredients. When serving, add one tablespoon of olive oil in each bowl.
Tip: If you want a creamy soup, remove some of the water and blend the rest. Then, depending on the desired density, mix the blended mixture with the previously removed water.
Soup with spinach and coconut oil
- 2 tablespoons of butter;
- 2 tablespoons of coconut oil;
- 1 large onion, chopped;
- 140 grams of cornstarch;
- 1 liter of water;
- 2 tablespoons of garlic powder;
- 1 tablespoon of turmeric;
- 1 pinch chili;
- 1 kg fresh or frozen spinach;
Melt the butter and coconut oil in a saucepan, then add the onion and let it soften. Add the cornstarch and stir slowly while you add a little bit of water. After it is boiled, season the soup and then add the spinach. Do not boil again. Pour the green soup into a bowl and serve it. Enjoy!
- 1 cabbage;
- 6 large pieces of spring onion or leek;
- 2 peppers;
- tomato juice or a few tomatoes;
- salt, black pepper, and curry by taste;
Chop the vegetables and put them in a pot. Cover generously with water. Add the spices and cook on high heat for 10 minutes. Then cook the soup over low heat until vegetables are cooked. You can also use carrots.
